Salad with Kale, Tomato, Broccoli Sprouts with Ginger-Turmeric Dressing

Ingredients For The Dressing:

Ingredients For The Salad:

To Prepare:

  1. Dressing: add all ingredients to a blender, blend
  2. Toss kale in a large bowl with half the dressing, massaging the kale to soften it slightly
  3. Add the onion and tomatoes and rest of the dressing
  4. Top with the broccoli sprouts and peanuts
  5. Enjoy!

Note: tomatoes and peanuts may be removed if lectin intolerant

Honey Ginger Applesauce

 
 

Ingredients:

To Prepare:

  1. Add all ingredients to the pressure cooker
  2. Cook on high pressure for 5 min, then turn off heat and natural release
  3. Open lid carefully, then blend with an immersion blender or mash with a potato masher
  4. Add additional honey to sweeten to taste

Banana Flour Brownies

 
 

Ingredients:

To Prepare:

  1. Combine the honey and coconut oil in a bowl
  2. Stir the banana flour and cocoa powder in another bowl
  3. Add the dry ingredients to the honey/coconut oil
  4. Add in and beat the eggs
  5. Pour the batter into greased (with coconut oil) baking sheet.
  6. Bake for 20-30 minutes at 350ºF.
